Crockpot Taco Soup

With the weather getting a little cooler, I have hauled my slow cooker out of the cupboard and am getting my pantry stocked with items for one of our favorite easy soups for fall and winter – Crockpot Taco Soup.  Or Crockpot Tortilla Soup.  But mine doesn’t have any tortillas in it, so I call it taco soup.  So very easy, and so very filling.  And it’s even (fairly) healthy for you – so a “win” on all fronts!  🙂

Here’s what you need:

  • 2 chicken breasts, fresh or frozen (or you can use the smaller chicken tenders, if you like)
  • 1 can of corn, drained (or use frozen corn, about 1 1/2 cups or so – to your liking)
  • 1 can of black beans, rinsed and drained
  • 1 can of diced tomatoes (I use fresh sometimes, if I have them)
  • 4 cups of broth (either vegetable or chicken) or 4 cups of tortilla soup base – again, you can use less if you want a thicker soup, more like a stew
  • 1 tablespoon taco seasoning, if not using the tortilla soup base noted above

Put the chicken breast/tenders in the bottom of the slow cooker.  Pour in the broth or soup base, and then add the other ingredients on top.  You can also add peppers, celery, etc.  Just use what ever extra veggies you have in the fridge that sound good.  That’s pretty much it!  Just put the lid on the slow cooker and cook on low heat for 6-8 hours.  Before I serve it I usually take 2 forks and shred up the chicken a little bit.  Then serve with chips/tortillas/crackers/whatever.  My daughter loves this soup topped with a big dollop of sour cream and a sprinkling of grated cheese.

With just two of us at home now, I usually cut this recipe in half.  Normally (with the quantities I listed above) it makes about 6 servings, give or take.  Even with cutting it in half, it still makes 3-4 servings; enough for dinner one night for the two of us, and a serving for my lunch the next day.  🙂

  4. We love soup in the winter. I made taco soup just last night. It’s just so good.

    We also like to have a dish I call slow cooker easy hamburger dish. Original, I know. 🙂 But it is so good. I love fall for all the great, yummy comfort foods to make.
